In this one-day course, Members will become an Associate of the Academy of Cheese, the first step to developing a greater understanding and appreciation of cheese. The course will be taught by Max Melvin, one of La Fromagerie’s senior cheesemongers and educators. He has written and presented many cheese workshops, always taking a unique, multidisciplinary approach to this wonderful subject. What you will learn... In this course, you will be taught everything you need to know to take your Level 1 exam and become an Academy of Cheese Associate. You will learn the correct way to taste cheese, how to present it, how it’s made and much, much more. Your curriculum for the day… 1. Milk Production and Cheesemaking Learn the details of milk production How to describe the key ingredients used in cheesemaking and the vital roles they play An overview of the steps involved in cheesemaking and maturation Understand the Academy of Cheese ‘Make/Post-Make’ (MPM) model 2. Maturing, Affinage and Grading Learn about cheese grading and its relevance - what’s the cheese equivalent of grand cru, premier cru and villages? Donnafugata Ben Ryé Masterclass – Wednesday 9th November
£95.00The Rallo family has made wine in Marsala on the island of Sicily since 1851, its ancient cellars tunnelling deep beneath the city. However, it wasn’t until 1983 that Giacomo Rallo established Donnafugata, which translates as ‘fleeing woman’ and is a reference to Queen Maria Carolina, who escaped the court of Naples in the early 19th century with her husband, Ferdinand IV of Bourbon, when Napoleon’s troops arrived, the couple ultimately taking refuge in Sicily. Six years after its birth, this iconic producer planted its first vines on Pantelleria - an island which sits closer to Africa than Sicily - and it is this secluded, wind-swept spot that is the origin of Donnafugata’s masterpiece Ben Ryé. Ben Ryé is cultivated from low bush vines bordered by lava stone walls. It is made by infusing a dry base wine with grapes which have been left to wither under the sun for up to one month. The result is of the world’s most revered sweet wines. The origin is the destination IWA Sake
£60.00Recently introduced in the UK, IWA Sake is the creation of Richard Geoffroy who charted the course of the legendary Dom Pérignon Champagne for 28 years as the fifth Chef de Cave. We are joined by Richard for a distinctive evening exploring his natural change from Champagne to Sake, using his blending (or assemblage) skills. We will taste IWA Sake 5, and discover how in order to craft Sake, rice has to be polished, washed, soaked, steamed, cooled, inverted, mashed, fermented and pressed. When making IWA 5, there isn’t a standard recipe, but rather a scientific experimentation that changes every year. The aim with IWA 5 is to create an internationally renowned Sake, while still staying true to Japanese tradition and methods. Led by Delamain’s managing director Charles Braastad, this Masterclass promises to afford Members rare insight into the magic and inner workings of Delamain, the exceptional Cognac house behind the Club’s own-label Cognac, The 67 Edition. For nearly two centuries, the House of Delamain has crafted world-renowned connoisseur Cognacs with art and patience. To attain this level of excellence, Delamain has had to master an essential ingredient: time. The House of Delamain is meticulous and painstaking in the selection and ageing of eaux-de-vie, exclusively sourced from Grande Champagne, Cognac’s finest terroir. In the Delamain cellars, only old, well-seasoned French oak casks are used to age the eaux-de-vie, preserving the subtle nuances of the Cognac as it journeys towards perfection.
