The second half of the book focuses on food and features 100 dishes created by Marcus Verberne. The chapters are categorised into: Sea and River, Land, Garden and Sweet. The recipes range from classics such as Cassoulet de Toulouse, to the Asian-inspired Thai Octopus Salad, to the completely unusual Saffron-poached Apricot & Almond Tart with Roquefort Ice Cream.

Ronan was born in Scarborough, North Yorkshire and has been involved in the wine business for over 20 years. Previous experience includes Executive Head Sommelier for Gordon Ramsay among working with many other world-renowned restaurants. Previous winner of the UK Sommelier of the Year, Ronan has represented the UK in the European Sommelier Competition twice. Ronan is also the CEO of the Court of Master Sommeliers Europe.
Marcus Verberne began his culinary career in Wellington, New Zealand. He came to London in 2001 and has worked with many high profile chefs as well as well as being a guest speaker at numerous food festivals across the country. Originally, Marcus planned to stay in London for just a couple of years; 20 years later, including roles such as Head Chef at Roast Restaurant, Verberne remains fascinated by the UK food scene.
