The origin is the destination IWA Sake
£60.00Recently introduced in the UK, IWA Sake is the creation of Richard Geoffroy who charted the course of the legendary Dom Pérignon Champagne for 28 years as the fifth Chef de Cave. We are joined by Richard for a distinctive evening exploring his natural change from Champagne to Sake, using his blending (or assemblage) skills. We will taste IWA Sake 5, and discover how in order to craft Sake, rice has to be polished, washed, soaked, steamed, cooled, inverted, mashed, fermented and pressed. When making IWA 5, there isn’t a standard recipe, but rather a scientific experimentation that changes every year. The aim with IWA 5 is to create an internationally renowned Sake, while still staying true to Japanese tradition and methods. Strongly and proudly anchored in its home country, IWA is made at the site of Shiraiwa in Tateyama - at the foot-steps of holly Mount Tate, Toyama Prefecture ( West Japan ) - Highly respectful of the traditional brewing methods, Richard Geoffroy is bringing a ground breaking approach into age old Sake making. Intimate dinner with Jasmine Hirsch of California’s pioneering Hirsch Vineyards – Monday 20th April (PT link)
£225.00When David Hirsch bought a remote sheep ranch on the Sonoma Coast in 1978, it wasn’t with the intention of making wine. A college dropout in New York, he’d moved west to pursue a career in women’s fashion that took him on regular trips to France where he cultivated a love of Burgundy. Even after planting vines two years later, for the next two decades, David concentrated on farming the soils, selling his grapes to the likes of Littorai, Kistler and Williams Selyem, all of which made Hirsch-designated wines. It was only in 2002, fascinated by the different nuances of his 60 different plots spread across his 72 acres, that he began making his own wines. A decade later, after years working closely with Californian trailblazer Ted Lemon of Littorai, he was farming the whole lot biodynamically, and the wines began garnering serious critical attention. Having returned to the estate in 2008 following a career in finance, David’s daughter Jasmine took over as general manager in 2015, after her father suffered a serious tractor accident. For the last seven years, she has also been its winemaker, producing a range of often small-production, single-vineyard Pinot Noirs and Chardonnays that represent the variety of soils, aspects and microclimates here in one of California's smallest AVAs, Fort Ross-Seaview, overlooking the Pacific Ocean. Led by Delamain’s managing director Charles Braastad, this Masterclass promises to afford Members rare insight into the magic and inner workings of Delamain, the exceptional Cognac house behind the Club’s own-label Cognac, The 67 Edition. For nearly two centuries, the House of Delamain has crafted world-renowned connoisseur Cognacs with art and patience. To attain this level of excellence, Delamain has had to master an essential ingredient: time. The House of Delamain is meticulous and painstaking in the selection and ageing of eaux-de-vie, exclusively sourced from Grande Champagne, Cognac’s finest terroir. In the Delamain cellars, only old, well-seasoned French oak casks are used to age the eaux-de-vie, preserving the subtle nuances of the Cognac as it journeys towards perfection. Members will begin with an introduction to four exquisite Delamain cognacs before enjoying a three-course dinner prepared by our Executive Chef Michael Gray, which will be paired with wines from Burgundy’s historic estate, Domaine Chanson. Château Margaux dinner hosted by Alexis Leven Mentzelopoulos, Philippe Bascaules & Blandine De Rouffignac – Tuesday 9th June (Life Member Access tickets)
£650.00Earlier in the year, we announced a Save The Date for a headline event this summer. We’re fairly confident that, together with the heading above, not much else needs to be said, but if you needed any additional prompting, the further details below will hopefully suffice… As the only first growth in its namesake commune, Château Margaux stands somewhat apart from the mighty Pauillac trio of Latour, Lafite and Mouton. Acclaimed for its elegant, perfumed rendering of its dominant Cabernet Sauvignon, the estate has, in recent years, moved to embrace organic viticulture, harnessed in the Sir Norman Foster-designed cellar that was inaugurated in 2015. Recent vintages have shown the benefit of such investment (though for the most part, Members attending this dinner will have to content themselves with older releases…) Our hosts for this rather special occasion will be not one, not two, but three directors of the property. Co-owner and CEO Alexis Leven Mentzelopoulos took over the role of CEO from his mother Corinne in 2023, continuing the family-owned and -run nature of the estate. He will be joined by Château Margaux’s managing director and chief winemaker Philippe Bascaules and R&D director Blandine De Rouffignac. Between them, they will guide Members through recent developments at the property, the Médoc, and Bordeaux as a whole, while presenting a stellar line-up of wines (including the hugely popular white). All three of the grands vins to be served come from acclaimed ‘9’ years, climaxing in the widely lauded 1989, a truly legendary Bordeaux vintage.
