Our Head Chef, Marcus Verberne, is delighted to introduce Heritage Tomatoes to the menu

Diversity and authenticity

“Heritage tomatoes have become increasingly popular and more readily available in recent years. Old tomato varieties are grown from a historical seed bank in a more traditional manner with open pollination and no hybridisation.

The range is endless and diverse, and when the different varieties are combined the result is an interesting mix of colours, textures, acidity and sweetness.

On the lounge we will be serving, torn buffalo mozzarella with crushed heritage tomatoes and basil, and in the clubroom, The Italian classic, ‘bruschetta pomodoro’ with home made focaccia basil and shaved parmesan”.

For the Heritage Tomatoes and Torn Buffalo Mozarella, our Head Sommelier, Terry, suggests:
Sauvignon Blanc, Castello di Buttrio, 2014 @ £40.00 per bottle

In Friuli’s Colli Orientali, Alessandra Felluga produces wines which proudly showcasing the purity and typicity of the wines made in north-eastern Italy.

A velvety and full-bodied style of Sauvignon if compared with its French counterparts, with distinctive yellow peppers, sage and wild fennel in addition to tropical fruits, peach and melon.

It perfectly perfectly the creaminess and freshness of the torn buffalo mozarella, and the citrus and herbal components accompany well the basil and the acidity of the tomatoes.

For the Italian bruschetta:
2017 Dafni, Psarades Vineyard, Lyrarakis, Crete, Greece @ £7.00 per glass

This is the ultimate Mediterranean white wine. Light and fresh, with a distinctive herbal character, refreshing mouthfeel and intense aromatic aſtertaste, in a citrus fruit background.
Its name derives from the laurel (bay leaf) plant, which is called “Dáfni” in Greek, as the wine produced resembles these aromas.

A wine that will match beautifully a similarly fragrant dish, with its herbal nuances and delicate nature.
