New to the menu this week – crispy raviolo filled with poached pear & goat’s cheese, served with candied walnuts & honey ice cream.
This dish is inspired by ‘seadas’ – Sardinian deep-fried pastries filled with fresh pecorino and drizzled with honey. These parcels were originally eaten by shepherds as a main course and was a way of using up their abundance of sheep’s-milk cheese. The raviolo are filled with sliced pear poached in white wine and goats’ cheese before being drizzled with honey and served with honey ice cream and candied walnuts.
