A salad with rice and all things nice…
During these warmer days, some light additions to the menu are most welcome. For this week’s tasting, our Head Chef presented a black rice and squash salad with pomegranate, served with a fantastic maple dressing.
Our team of sommeliers recommended a glass of the fantastic 2015 Fleurie, Abbaye Road, Marc Delienne. Produced from the Gamay grape and planted in one of the cru of Beaujolais, this expression is known for its floral, delicate and feminine profile.
The notes of red, crunchy berries balances with an undertone of orange peel, and these wonderful flavours complement the salad perfectly. This is a very complex wine with great elegance and layers of interest. With a medium to long finish, this was an excellent vintage in Beaujolais and the slightly nutty aftertaste works in unison with this earthy salad.
