When three isn’t a crowd: sliders & a glass of Chenin Blanc

Three pulled pork belly sliders, celeriac & apple slaw served with pig salt and Bramley apple sauce made their way onto our table in the Club earlier today, and our sommeliers shortly served us a glass of the fresh, fruity and zesty 2017 Millton Chenin Blanc Te Arai. Millton was the first producer in New Zealand to gain Bio-Gro certification for organic wine production in 1989 and later gained the bio-dynamic certification Demeter in 2009.

Lighter styles of Chenin Blanc work beautifully with the tenderness of the pork, and the ‘zestiness’ shown in the glass balances the salt perfectly. Although this dish can handle a bolder wine, fresh expressions with notes of juicy fruits work in unison with pork – we save the more tannic expressions for red meat…

Having said this, we certainly wouldn’t turn our nose up at a young red Burgundy, if it was a red you were hoping for.
