Squash partners – roasted butternut squash & Domäne Wachau
Roasted butternut squash, charred sweetcorn & red pepper salsa, served with crumbled feta and toasted pumpkin seeds is the newest addition to our ever-changing menu at the Club.
Terry, our Head Sommelier recommends pairing this light dish with a refreshing glass of 2017 Grüner Veltliner Smaragd, Terrassen, Domäne Wachau.
Domäne Wachau is one of Austria’s most renowned wineries, based in Austria’s most prestigious wine growing region. Steep-terraced vineyards and primary rock soils define this wine. “Smaragd” stands for ripe, complex, full-bodied wines of the Wachau, and ones that have fantastic ageing potential.
This glass is open and approachable on the nose, showing ripe orchard fruits such as yellow apple as well as white pepper aromas. Delicate citrus notes are balanced beautifully with a touch of flinty minerality, and on the palate, the balanced textures have a crisp acidity that works with the rich texture of the butternut squash and garlic.
Additionally, the flinty minerality component combined with exotic aromas work brilliantly with the coriander, crumbled feta and toasted pumpkin seeds.
