ON THE LIST | Gastón Adolfo

Born in Buenos Aires and raised in Chianti, Assistant Deputy Head Sommelier Gastón Adolfo moved to London in 2017 to start his wine career, joining the Club in 2021 and since achieving his WSET Level 4 Diploma. He points us towards some lesser-known Tuscan wines on the London list worth seeking out 

‘While Tuscany is renowned for its flagship Brunellos and classic Chiantis, its mosaic of microclimates and soils allows for the vinification of a host of grape varieties – and an increasingly diverse range of styles. 

‘In the south, the Maremma overlooks the Mediterranean Sea, and is home to the renowned Fattoria le Pupille which, in 2000, discovered a plot with different soil to the rest of its holdings, and decided to plant it to the highly unorthodox Petit Manseng. This wine is fermented and aged in large tonneaux, for 16 months, before another 12 months in bottle. The first vintage was 2018, with just 1,200 bottles made – naturally, some of them made their way onto 67 Pall Mall London’s list.

‘In the centre of Tuscany sits an appellation which is barely known outside Italy. Valdarno di Sopra was established in 1716 by the same decree of the Grand Duke of Tuscany Cosimo III de’ Medici that delineated the borders of Chianti. Today it is home to just 18 producers, all of whom follow organic farming – the only such area in all of Italy. Look out in particular for Podere il Carnasciale and its flagship Il Caberlot, named after a natural genetic mutation of Cabernet Franc and Merlot and produced in tiny quantities. Critic Antonio Galloni calls it “one of Italy’s most distinctive and highly-sought wines – a wine many people have heard of, but few have actually tasted” – but you’ll find it on the London list. 

‘And if you’re a fan of the Rhône, look out for the arrival, in a few weeks, of a wine considered among the best Italian Syrahs, from Stefano Amerighi, a biodynamic producer who is one of the leading names in the Cortona appellation.
