August sees the bar taken over by a month-long celebration of gin, in partnership with Singapore’s own Singapore Distillery.
From guest shifts and gin tastings to sunset drinks and weekday cocktail specials, expect fresh pours, inventive cocktails and plenty of reasons to settle in for another round.

Enjoy your second Singapore Distillery cocktail on us on Mondays to Wednesdays, 14:00 – 19:00 this August.
Discover Singapore Distillery’s distinctly gins through a trio of signature serves, from the bright and citrus-led Lime Garden Martini to the tropical Coconut Pandan Gula Melaka, or keep it timeless with the Merlion Gin & Tonic.

Singapore After Dark: An exclusive dinner with Chef Damian D’Silva
Saturday 8th August
Singapore’s food story begins with the recipes passed down through generations, shaped by migration, community and the many cultures that have made this island home. Few have championed that legacy more passionately than Chef Damian D’Silva, whose lifelong work has helped preserve Singapore’s Eurasian culinary heritage and the stories embedded within it.
Chef Damian becomes 67 on Scotts’ first Guest Chef in Residence for Singapore After Dark, bringing highlights from Rempapa and Gilmore & Damian D’Silva to the venue. Showcasing heirloom Eurasian, Peranakan and Chinese-inspired dishes, the menu celebrates the cross-cultural influences that have shaped Singapore’s food culture for generations.
In this one-night-only ticketed dinner, join Chef Damian as he presents a specially crafted menu inspired by the communities, traditions and forgotten flavours that have defined Singapore’s table. In celebration of National Day, the evening revives cherished recipes alongside lesser-known dishes, setting the stage for a month that traces how Singapore’s cuisine continues to evolve from these enduring foundations.

Sparkling Tasmania: The Art of Cool-Climate Fizz
Wednesday 12th August
Over the last decade or so, Tasmania has established itself among Australia’s most dynamic wine regions, its cool, maritime climate lending itself in particular to elegant Chardonnay and refined Pinot Noir.
Such territory, of course, goes hand in hand with traditional method sparkling wines – and so it has proved. Undoubtedly now Australia’s premier region for fizz, Tasmania’s long growing season provides ideal conditions for sparkling wines of vibrant acidity, exceptional finesse and notable ageing potential.
Join us, then, as we go on a journey through the diversity of Tasmanian fizz, from vibrant non-vintage bottlings and elegant rosés to older vintage wines and the rare complexity of a late-disgorged prestige cuvée. Along the way, we’ll discover how different terroirs, grape varieties, blends and winemaking philosophies contribute to each wine’s individual character.
Our host for the evening will be Ben Hasko MS, MW. Born in the UK, raised in Australia and now based in Singapore, Ben is a wine educator and consultant, and one of the very few people in the world to boast both the Master Sommelier and Master of Wine qualifications. He will be joined by Ed Carr, Chief Winemaker of sparkling specialist House of Arras, and Fran Austin, Owner and Winemaker of the acclaimed Delamere Vineyards.
Whether you’re a lover of all things sparkling or a fan of Australian wine looking to explore the country’s cool-climate scene, this tasting offers a window into the artistry, craftsmanship and evolution of one of the world’s most exciting regions for sparkling wine.

#67SommSocial: Rioja vs Ribera – Two Faces of the Same Coin with Sanjaya

It’s time for another Saturday #67SommSocial, this time led by Junior Assistant Head Sommelier Sanjaya Kumar. And this time, we’re heading to Spain…
Join Sanjaya to explore the two most celebrated Spanish wine regions – Rioja and Ribera del Duero. Although both revolve around Tempranillo, Rioja and Ribera express the variety through remarkably different personalities, shaped by their individual terroir, philosophy, and winemaking approach. And while Rioja has always been the more traditional of the pair, and Ribera the new kind on the block, in recent years a more free-thinking approach has taken hold in Rioja, making generalisations less straightforward.
This is not a structured, classroom-style masterclass, but rather a relaxed tasting in a casual, living room style set-up which will see Sanjaya lead the session and introduce each wine while mingling with Members throughout.
Come and join him to discover how the same grape variety can produce wines ranging from elegant and savoury to bold and powerful, while tasting benchmark examples from each region.

Chappellet: Elevating Napa Valley Mountain Terroir

When Donn and Molly Chappellet founded Chappellet in 1967, they chose a different path from their contemporaries, looking beyond the Napa Valley floor towards the region’s steep, rugged hillsides.
Following the advice of legendary winemaker André Tchelistcheff, they settled on the rocky eastern slopes of the valley. There, in the six decades since, they have helped to establish Pritchard Hill as one of California’s most acclaimed winegrowing enclaves.
Chappellet’s intense yet elegant, ageworthy Cabernet Sauvignons have come to embody the rugged terroir and intensity of fruit that define this increasingly heralded Napa sub-region, with its signature mix of grandeur, power and purity.
Today, president of the estate David Francke works with the second generation to steward its future, with a notable focus on sustainable farming. Over the course of three decades, David has established a reputation as one of the most respected and innovative leaders in the California wine industry. A long-time manager of the Robert Mondavi Winery, he joined the board of Chappellet in 2017 – the year the property celebrated its 50th anniversary.
We are delighted to welcome him to the Club to open six Chappellet wines spanning the last 15 years in what should be a fantastic evening.

Celebrating the Old Vines and Back Vintages of Barossa Valley stalwart Kaesler
Tuesday 25th August
Few wine regions can boast a viticultural history to compete with Australia’s Barossa Valley, home to some of the oldest vines in the world.
Among its most venerable producers, Kaesler traces its origins back to the 1890s, and the Silesian immigrants who first planted vineyards here. The Kaesler family farmed the land for over a century, until it was sold to a team led by Swiss-born agribusiness specialist Ed Peter in 1999.
The transition allowed the Kaesler team to set about reinvigorating the vineyards, introducing regenerative farming practices to ensure the vines’ continued health, notably the very oldest plantings. And none are more treasured than those planted in 1893, which form the key component of Kaesler’s flagship, the memorably named ‘Old Bastard’ cuvée.
Even beyond this, the majority of the vineyards are more than 50 years old, and as a consequence – and unlike many Barossa wineries – Kaesler still relies on its own estate-grown fruit. Shiraz continues to play a prominent part, but long-time Barossa favourites Grenache, Cabernet Sauvignon and Mourvèdre (aka Mataro, in Aussie parlance) also have roles to play in the range, not least in the GSM blend Avignon.
We are delighted to welcome second-generation owner Ed Peter to the Club to present these wines. Ed developed a deep connection to the estate in his youth, spending many childhood holidays there. Today, having spent seven years living in Singapore, he represents Kaesler across Asia and further afield though its distributor partner Pure Wine Co, which represents a clutch of stellar Aussie wineries.
