No matter your relationship status, we can’t think of a better way to celebrate the legend of St. Valentine than with our one true love – wine.

Given that chocolate is a tradition at this time of year, we thought we would invite Members and their guests to a very relaxed evening combining two of our favourite things.

We will taste over a dozen different craft chocolate bars made from single estates in Peru, Ecuador, Tanzania and the Solomon Islands to name but a few.

Among the collection chosen, we’ll try two vintage bars from Rob Anderson of Fresco (USA), crafted from beans grown in the Maranon Valley of Peru – 2014 and 2015. Much like wine, vintages vary; different harvest conditions has resulted in the 2014 bar remaining remarkably pristine and bright, however the 2015 is earthy and mellow.

In keeping with our theme, we will discuss the fermentation that takes place by tasting a couple of bars from Mikkel Friis Holm. One bar is “turned” twice during fermentation, the other three times. This simple difference in the number of times the beans are “turned” brings out different notes in the chocolate.
