May Resident Chef Series

This May, Resident Chef Mirko Febbrile presents a menu inspired by southern Italian comfort, with a focus on depth of flavour and simple, well-balanced compositions.
We start off with the Baked Tomino: warm, soft cheese wrapped in pancetta and scented with rosemary. The Mafaldine Ossobuco follows, with fresh handmade soft pasta paired with a rich oxtail ragu, lifted by primitivo, almonds, and aged cheeses.
From the sea, the Branzino Acqua Pazza is gently cooked with San Marzano tomatoes, olives, and capers, finished with parsley oil and a touch of chardonnay.
Dessert leans into texture and richness, with a Hazelnut Bigné layered with dark chocolate, roasted hazelnut, feuilletine, and a smooth hazelnut mousse, balanced with a hint of fleur de sel.

Summer Party 2026 – 67 Soleil

A tradition across the 67 Pall Mall group, the Summer Party brings Members together to celebrate the spirit of the season: generous wines, lively conversation, and the company of fellow Members. This year marks a special first, as we host the celebration within the walls of the Club and a brand new space that we are launching – 67 on Scotts.
67 on Scotts is our newest concept occupying a double-storeyed corner unit on Levels 1 and 2 on Shaw Centre (we suspect you may have seen the hoarding up on the ground level), designed for large-scale luxury events from celebrations and parties to brand showcases and activations. Members will be among the first to experience the space in its full glory as we bring it to life.
67 Soleil draws inspiration from the spirit of a European summer, and will see the Club transformed into a multi-level summer playground, for a different experience on each floor.
Across cultures, the sun carries powerful meaning — vitality and renewal, rhythm and continuity — making it a fitting symbol for a night that brings together Members, friends of the Club, and partners from across the worlds of wine and gastronomy.
Throughout the evening, Members will journey through a series of distinctive settings:
Level 1 — The Coastal Room
A relaxed seaside atmosphere welcomes you into 67 on Scotts, with bright wines, fresh flavours and the feeling of an endless summer afternoon.
Level 2 — Ibiza Nightfall After Party
As the sun sets, the tempo rises. Expect vibrant energy, flowing wines and upbeat music that will get you moving all night.
Level 27 — The Summer Cellarium
At the heart of the Club, a celebration of wine takes centre stage with exceptional bottles poured alongside roaming culinary stations.
Level 28 — The Mykonos Garden Party
High above the city, the evening continues under the open sky at the Garden Bar. Inspired by the breezy garden parties of Mykonos, expect sweeping views, late-night pours, and the rhythm of a long summer night.
More than a celebration, 67 Soleil offers a glimpse into the many ways your Club can come alive. Each corner will unfold with its own character from vibrant food stations and flowing wines to music, entertainment and thoughtfully designed settings that evolve throughout the evening.
We welcome Members to experience the Club in motion, and to see how ideas can take shape within these spaces, much in the same spirit.

To welcome summer, NV Pol Roger Brut Réserve will flow throughout the Club, the perfect companion for long summer afternoons and the opening notes of a night to remember.
Level 1 & 2 — The Coastal Room & Ibiza Nightfall
The celebration begins with wines made for the sun. NV Billecart-Salmon Blanc de Blancs offers delicate citrus and green apple, crisp enough to echo the sea breeze of a Mediterranean afternoon, and 2024 Chateau d’Esclans Whispering Angel Rosé brings Provençal charm in a glass, soft and perfumed, perfect for wandering between rooms or catching up with friends. Meanwhile, the 2024 Lagar de Cervera Albariño dazzles with Atlantic freshness and lively acidity, a bright foil to the creamy texture of the Blanc de Blancs.
After the sun sets, NV Vincent Bouzerau Crémant de Bourgogne keeps the bubbles going at Ibiza Nightfall, where we’re sure you’d want to put on your dancing shoes…
Level 27 — The Summer Cellarium
At the heart of the Club, wine takes centre stage. Whites start with the sunlit precision of 2023
Domaine Fernard & Laurent Pillot Chassagne-Montrachet, its mineral-driven palate and subtle richness showing why Burgundy remains timeless. South Africa contributes with 2024 Ken Forrester Old Vine Chenin Blanc, where bright orchard fruits and a hint of honey speak to decades of vinicultural mastery, and not forgetting 2023 Niepoort Redoma Branco Reserva, a masterclass in Douro white wine-making that layers orchard fruit, citrus zest, and schist-derived minerality.
Reds traverse some classic terroirs. From Oregon, 2022 Domaine Drouhin Pinot Noir brings the Drouhin family’s Burgundian touch to the Dundee Hills — fragrant red berries, fine tannins, and the precision that has made it a benchmark for American Pinot. Bordeaux is represented by 2015 La Dame de Montrose, a polished Saint-Estèphe that balances dark fruit, cedar and structure with immediate drinkability.
Spain arrives in grand style with 2011 La Rioja Alta Gran Reserva 904, one of Rioja’s great classics. Aged for three years in American oak and bottle-matured to perfection, it unfolds with layers of blackberry, orange peel, cedar and balsamic spice — silky, complex and beautifully balanced, a Rioja that shows exactly why the estate has been a benchmark since 1890.
And for Members seeking something uniquely Italian, 2021 La Ca’Nova Barbaresco stands out as a hidden gem; aromatic, structured, and full of personality.
Level 28 — The Mykonos Garden Party
High above the city, the evening shifts to cocktails, open skies, and sweeping views. Here, the pace slows just enough for long, lingering sips under the stars — the perfect Mediterranean finale to a night of exploration, discovery, and celebration.
From bright coastal whites to cellar classics and late-night cocktails, your glass will never run dry — and your summer night will linger long after the last pour.

From New Zealand to Burgundy via Singapore, with Domaine Thomson

When Pui Mun (‘PM’) Chan Hall-Jones was introduced to the joys of wine by her father as a teenager growing up in Singapore, it formed a lasting impact. Her father was a lover of the classics – Bordeaux, Burgundy and German Riesling – and it was a love that PM would go on to inherit and pursue further when her banking career took her to Hong Kong.
There, as she honed her palate, Burgundy came to the fore and PM developed a fascination with Pinot Noir. So much so that in 2000, with her late husband David Hall-Jones, she purchased a plot in Central Otago and planted the Surveyor Thomson vineyard, the building block of what was to become Domaine Thomson. Other blocks followed, PM working closely with winemaker Dean Shaw over the years to create Pinots with as little intervention as possible – to let the grapes ‘speak in the glass’, as she says.
In 2013, Francophile PM acquired a parcel of vines in Gevrey-Chambertin, where she has a holiday home. This was followed five years later by other parcels in Saint-Aubin and Mercurey, each producing a separate cuvée. In recent years, PM has added a Central Otago Chardonnay to the Domaine Thomson range to complement her white Burgundies.
We are thrilled to welcome PM to the Club for what should be a fascinating evening exploring the similarities and differences between the two terroirs, and how that informs the respective styles of her wines in the Northern and Southern Hemispheres.

Dinner with the Founder of Cult Australian Label Cloudburst

Tucked away in the remote coastal reaches of Western Australia, Cloudburst is one of Australia’s most enigmatic yet acclaimed wineries. Founded in 2005 by American-born ecologist Will Berliner, this boutique estate, deep in Margaret River, has built up a cult following for its uncompromising approach to terroir.
Nestled in the pristine Leeuwin-Naturaliste National Park and UNESCO biodiversity region, Cloudburst was planted on previously untouched bushlands. Operated entirely by hand and untouched by chemicals, the vineyard remains entirely dry-grown, own-rooted, and stands as a beacon of respect for nature and sense of place.
Cloudburst’s inaugural releases in 2010 wowed critics and collectors alike with their expressive, fruit-driven style and precision. Yielding just a small number of wines each year – often fewer than a thousand cases in total – these have come to be among Australia’s most critically acclaimed expressions of Chardonnay and Cabernet. Yet their defining characteristics are not points but clarity, energy and a saline, mineral edge.
We are delighted to welcome Will on a brief visit to Singapore, where he will host an intimate, five-course dinner featuring a selection of vintages, many of which are no longer commercially available.

Chef Mirko Febbrile (Somma & Fico) Pasta Workshop
Sunday 17th May
Join Chef-Partner Mirko Febbrile, of Somma and Fico, for an intimate pasta workshop shaped by his Puglian roots and a philosophy grounded in simplicity over excess, and ingredient-led cooking. He will walk Members through the fundamentals of pasta making, sharing techniques and insights from his time in Michelin-awarded kitchens and from his home in Southern Italy. Expect a live demonstration, followed by a serving of Gambero rosso and pesto cavatelli paired with 2023 Vistamare, Ca’Marcanda, Gaja.

Explore Contemporary South Australia at our Walk-around tasting

The classic image of South Australia is of bold, old-vine Barossa Valley Shiraz from producers such as the venerable Turkey Flat, whose oldest vineyards date back to 1847. And while such heritage continues to be preserved, in recent years, the diversity of the region has been boosted via a range of new names.
Both faces will be present at a walkaround tasting that will shine a spotlight on the modern face of South Australia, with up to a dozen producers pouring a range of wines.
Among them will be boutique labels such as Setiono, with its delicate, Rhône-inspired Syrah, and Protero, the Adelaide Hills Nebbiolo-focused vineyard from Stephen and Fiona Pannell. Both have been founded in the last few years.
Then there is the Grenache-focused Thistledown, established by two British Masters of Wine in 2010; the remarkable collaborative project Vanguardist, which blends fruit from top producers across the region for its signature Shiraz-Cabernet blend; and the minimal-intervention, amphora-aged wines of Brash Higgins, founded in McLaren Vale by US sommelier Brad Hickey (who will also showcase its Prohibition Gin as an added extra).
They will be joined by more established names such as Murdoch Hills and Shaw + Smith, the more classic face of Adelaide Hills Pinot Noir and Chardonnay, and Kilikanoon, a benchmark of Clare Valley.

Exploring the hallmarks of Champagne Billecart-Salmon with sixth-generation Antoine Roland-Billecart

One of Champagne’s few remaining family-owned grandes marques, Billecart-Salmon was founded in 1818 by Nicolas François Billecart and Elisabeth Salmon. Today, the house is run by seventh-generation Mathieu Roland-Billecart and his cousin, sixth-generation Antoine Roland-Billecart.
Antoine officially began working for the maison in 1985, and was largely responsible for opening up the Asian market in the ‘80s and ‘90s at a time when Billecart-Salmon was moving from a mass-market brand to high-end fine wine. We are delighted to welcome him to the Club to present an in-depth masterclass exploring how the house’s philosophy translates into style via four defining expressions, across four different flights of wines:
- Traditional Blend - harmony, balance, and precision
- Rosé - finesse, texture, and emotion
- Blanc de Blancs - elegance, tension, and purity
- Barrel Vinification - depth, structure, and complexity
Each flight is anchored by benchmark bottlings, from the oak-vinified Sous Bois and Le Clos St-Hilaire to the prestige cuvées Nicolas Françcois and Elisabeth Salmon.

We’re firing up the grill for the third edition of Sunday Cookout — a monthly BBQ series taking over the Whisky Bar, designed for unhurried Sundays, good conversation, and deeply satisfying fare.
This edition takes its cue from the busy streets of Tokyo — the energy, the movement, and the quiet moments found in between. Expect a vibrant spread of Japanese grill favourites, from yakitori and kushiyaki to seasonal plates made for sharing, alongside comforting classics to round off the evening.

The Inner Circle: 8 Mistakes Leaders Make in Public Communication

Alongside host Debbie Yong (former journalist with The Straits Times, The Business Times, and Fortune & director Debbie Yong), we introduce a new leadership talk series, The Inner Circle, beginning with Quak Hiang Whai, Senior Communications Advisor at the Ministry of Home Affairs and a communications strategist.
Topic: Leading Through Crisis – Fiascos & Lessons in Public Communication
Poor communication has brought down many leaders, often spectacularly. Most of these missteps are not complex; they appear, in hindsight, to be common sense. Leaders should know better. And yet, the same mistakes repeat themselves. Again and again.
A poorly handled response can escalate a situation rather than contain it, with leaders inadvertently creating new crises of their own making. History offers no shortage of such moments – where the failure lies not in the crisis itself, but in how it was communicated.
In this opening session of The Inner Circle, Hiang Whai reflects on how leaders are truly perceived under pressure, and whether the authority built over the years is ever as secure as it seems. The session will begin with a short address by Hiang Whai, followed by a fireside conversation and an open floor for questions. Drawing on real cases and hard-earned lessons, the discussion is candid, practical, and seldom shared so openly.

About Hiang Whai
Quak Hiang Whai has spent four decades at the intersection of media, government, and corporate life. He began his career in journalism, working across print, broadcast, and digital – including as a news editor at The Business Times – before moving into senior communications leadership roles in banking, property, and the public sector.
A trusted advisor to the Singapore government, he has managed major crises, trained leaders from the boardroom to the Cabinet, and developed a rare understanding of how institutions think, decide, and communicate. He is the author of No Comments & Don’t Quote Me! and It’s a Campaign, Stupid, and is known for his direct, practical insights on leadership communications and crisis management.
