Events Overview

May Resident Chef Series

This May, Resident Chef Mirko Febbrile presents a menu inspired by southern Italian comfort, with a focus on depth of flavour and simple, well-balanced compositions.

We start off with the Baked Tomino: warm, soft cheese wrapped in pancetta and scented with rosemary. The Mafaldine Ossobuco follows, with fresh handmade soft pasta paired with a rich oxtail ragu, lifted by primitivo, almonds, and aged cheeses.

From the sea, the Branzino Acqua Pazza is gently cooked with San Marzano tomatoes, olives, and capers, finished with parsley oil and a touch of chardonnay.

Dessert leans into texture and richness, with a Hazelnut Bigné layered with dark chocolate, roasted hazelnut, feuilletine, and a smooth hazelnut mousse, balanced with a hint of fleur de sel.

The May menu is as follows:

Baked Tomino
Pancetta, tomino, rosemary

Mafaldine Ossobuco
Fresh handmade mafaldine pasta, oxtail, almonds, primitivo di Puglia, pecorino, parmigiano

Branzino Acqua Pazza
Sea bass, San Marzano tomatoes, olives, capers, parsley oil, chardonnay

Explore Contemporary South Australia at our Walk-around tasting

Thursday 21st May

The classic image of South Australia is of bold, old-vine Barossa Valley Shiraz from producers such as the venerable Turkey Flat, whose oldest vineyards date back to 1847. And while such heritage continues to be preserved, in recent years, the diversity of the region has been shaped by a range of new names.

Both faces will be present at a walkaround tasting that shines a spotlight on the modern expression of South Australia, with up to a dozen producers pouring a diverse range of wines.

Alongside newer pioneers such as Protero, the Adelaide Hills Nebbiolo-focused vineyard from Stephen and Fiona Pannell, and the Grenache-focused Thistledown, established by two British Masters of Wine in 2010, guests will also discover a fresh perspective on the region’s evolving identity.

They will be joined by more established names such as Murdoch Hills and Shaw + Smith, the classic face of Adelaide Hills Pinot Noir and Chardonnay, alongside Kilikanoon, a benchmark producer of Clare Valley.

We invite you to meet the winemakers, owners, and importers behind these labels, and discover the contemporary face of South Australia.

Exploring the hallmarks of Champagne Billecart-Salmon with sixth-generation Antoine Roland-Billecart

Thursday 21st May

One of Champagne’s few remaining family-owned grandes marques, Billecart-Salmon was founded in 1818 by Nicolas François Billecart and Elisabeth Salmon. Today, the house is run by seventh-generation Mathieu Roland-Billecart and his cousin, sixth-generation Antoine Roland-Billecart.

Antoine officially began working for the maison in 1985, and was largely responsible for opening up the Asian market in the ‘80s and ‘90s at a time when Billecart-Salmon was moving from a mass-market brand to high-end fine wine. We are delighted to welcome him to the Club to present an in-depth masterclass exploring how the house’s philosophy translates into style via four defining expressions, across four different flights of wines:

  • Traditional Blend - harmony, balance, and precision
  • Rosé - finesse, texture, and emotion
  • Blanc de Blancs - elegance, tension, and purity
  • Barrel Vinification - depth, structure, and complexity

Each flight is anchored by benchmark bottlings, from the oak-vinified Sous Bois and Le Clos St-Hilaire to the prestige cuvées Nicolas Françcois and Elisabeth Salmon.

We invite Members to join Antoine for what promises to be an exceptional evening.

Welcome Drink: NV Billecart-Salmon, Réserve, Brut

The Inner Circle: 8 Mistakes Leaders Make in Public Communication

Tuesday 26th May

Alongside host Debbie Yong (former journalist with The Straits Times, The Business Times, and Fortune & director Debbie Yong), we introduce a new leadership talk series, The Inner Circle, beginning with Quak Hiang Whai, Senior Communications Advisor at the Ministry of Home Affairs and a communications strategist.

Topic: Leading Through Crisis – Fiascos & Lessons in Public Communication

Poor communication has brought down many leaders, often spectacularly. Most of these missteps are not complex; they appear, in hindsight, to be common sense. Leaders should know better. And yet, the same mistakes repeat themselves. Again and again.

A poorly handled response can escalate a situation rather than contain it, with leaders inadvertently creating new crises of their own making. History offers no shortage of such moments – where the failure lies not in the crisis itself, but in how it was communicated.

In this opening session of The Inner Circle, Hiang Whai reflects on how leaders are truly perceived under pressure, and whether the authority built over the years is ever as secure as it seems. The session will begin with a short address by Hiang Whai, followed by a fireside conversation and an open floor for questions. Drawing on real cases and hard-earned lessons, the discussion is candid, practical, and seldom shared so openly.

Come with your questions. Leave with clarity and a sharper sense of how to navigate the moments most leaders wish they could redo.

About Hiang Whai

Quak Hiang Whai has spent four decades at the intersection of media, government, and corporate life. He began his career in journalism, working across print, broadcast, and digital – including as a news editor at The Business Times – before moving into senior communications leadership roles in banking, property, and the public sector.

A trusted advisor to the Singapore government, he has managed major crises, trained leaders from the boardroom to the Cabinet, and developed a rare understanding of how institutions think, decide, and communicate. He is the author of No Comments & Don’t Quote Me! and It’s a Campaign, Stupid, and is known for his direct, practical insights on leadership communications and crisis management.

Castello del Terriccio – Nine Vintages of Super Tuscan Lupicaia

Wednesday 3rd June

One of Tuscany’s most beautifully situated coastal estates, just north of Bolgheri, Castello del Terriccio is recognised for producing wines of quiet power and remarkable longevity.

Few estates carry a history quite like this. The land traces back to the Etruscans, later serving as a coastal outpost during the Maritime Republics, before becoming a feudal estate under the Gaetani Counts. In more recent history, it came into the hands of the Serafini Ferri family, who have shaped its modern identity.
Its 60 hectares of vineyards look out towards the sea, benefitting from its warmth and light, while the surrounding Mediterranean ‘maquis’ and eucalyptus lend a distinctive aromatic signature to the wines. Here, Cabernet Sauvignon leads, supported by other carefully selected Bordeaux varietals, shaped over time into one of Italy’s most compelling Super Tuscans – Lupicaia.

Castello del Terriccio’s flagship wine, Lupicaia is known for its balance, structure, and ease of drinking even in its earlier years. For this special evening, we are pleased to welcome Count Vittorio Piozzo di Rosignano Rossi di Medelana, who will guide Members through a vertical spanning nine vintages. An opportunity to explore the evolution of Lupicaia across time, vintage conditions, and bottle age.

The wines we will be tasting:
2003 Castello del Terriccio, Lupicaia, Toscana IGT
2004 Castello del Terriccio, Lupicaia, Toscana IGT
2005 Castello del Terriccio, Lupicaia, Toscana IGT
2006 Castello del Terriccio, Lupicaia, Toscana IGT
2007 Castello del Terriccio, Lupicaia, Toscana IGT
2008 Castello del Terriccio, Lupicaia, Toscana IGT
2009 Castello del Terriccio, Lupicaia, Toscana IGT
2010 Castello del Terriccio, Lupicaia, Toscana IGT
2011 Castello del Terriccio, Lupicaia, Toscana IGT

Cool-climate Cape Chardonnay & Pinot Noir with Bevan Newton Johnson

Wednesday 10th June

Wherever you look these days, it feels like ‘cool climate’ is wine’s watchword. South Africa isn’t necessarily the first country you would associate with the term, but the Newton Johnson family was somewhat ahead of the curve when they moved to the cool coastal enclave of Hemel-en-Aarde back in 1995.

Dave Johnson had just qualified as a Cape Wine Master – the highest academic qualification in South African wine – via a thesis on Pinot Noir when he moved an hour and a half’s drive out of Cape Town with his wife, Felicity Newton, and promptly started building a cellar and planting vines. Today, Newton Johnson is the source of ‘some of the best Chardonnays and Pinot Noirs you will find in the Cape’ according to critic Neal Martin.

Dave’s enthusiasm for Burgundian varieties was eagerly adopted by his sons, Bevan and Gordon, who have since taken the family producer to new heights. Largely self-taught, Gordon took over as winemaker in 1999 before meeting his wife Nadia during harvest in 2004. Today, the husband-and-wife winemaking team has over 40 vintages of experience between them.

Gordon’s brother Bevan became managing director in 2002, and we are delighted to welcome him to the Club for a refined exploration of cool-climate Cape Pinot and Chardonnay. Join him to discover Newton Johnson’s distinctive, terroir-driven approach – including two single-vineyard cuvées – in what should be an enlightening evening.

Caviar pairing masterclass – which wines (or spirits) will work best?

Thursday 11th June

It’s the question to which we all need to know the answer – what is the best pairing for the finest caviar? And the good news is that we have the perfect opportunity to find out…

Our guides for this enlightening evening are Senior Wine Development Manager Bonnie Yap and Victoria Solyanik, founding partner and managing director of Caviar d’Eden.

Originally from Russia, where caviar has a longstanding role in fine gastronomy, Victoria brings deep knowledge of the traditions, harvesting techniques and appreciation of this prized delicacy. Through Caviar d’Eden, she works closely with leading chefs, sommeliers, hotels and restaurants to showcase high-quality sturgeon caviar across Asia. Victoria will share insights into the heritage, craftsmanship and enjoyment of caviar, outlining how different varieties of sturgeon, from Siberian to Russian, offer different nuances of texture and flavour.

Together with Bonnie and Victoria, we will explore pairings for four types of caviar, from Champagne to off-dry Riesling; rich Jura to elegant Pinot; and two contrasting spirits, all intended to enhance the cleanliness and character of this prized roe. And best of all? There are no correct answers!

So join us for what promises to be a fun and fascinating evening.

Uncovering the cooler side of Piedmont with Alessia Travaglini

Thursday 11th June

Wine lovers tend to think of Piedmont as the home of Barolo, Barbaresco and their powerful, long-lived reds. But there is another, more restrained side to this northern Italian enclave…

And nowhere is it more vividly showcased than in the Alpine- (rather than Mediterranean-) influenced wines of Gattinara. A DOC since 1967, and upgraded to DOCG in 1990, Gattinara is one of northern Italy’s most distinctive red wines. Like Barolo and Barbareso, it is built primarily from Nebbiolo, but grown at the foothills of the Alps in northern Piedmont, and delivering a lighter, leaner, more savoury-toned rendering of the variety.

Gattinara is the only Piedmont region where Nebbiolo is grown on volcanic soil, the high mineral content of which yields wines with pronounced acidity, lifted aromatics and a certain linear tension and freshness. The cooler climate also leads to more restrained alcohol levels than many southern Piedmont Nebbiolos, marrying the variety’s signature perfume and longevity with cooler, mineral-laced tones.

Among the prime exponents of Gattinara is Travaglini, which was founded in the region in the 1920s. Today it is led by the fifth generation of the family, which includes Alessia Travaglini, who we are delighted to welcome to the Club for a four-course paired dinner specifically designed to showcase Gattinara’s charms.

Having previously worked as a sommelier in Milan’s restaurant scene, today Alessia oversees the winery’s international markets, promoting the identity and heritage of her family’s wines, and helping to share their story with a wider audience. We invite you to join her to hear that story firsthand…

#67SommSocial with Arthur: Old World Oddities from the Road Less Poured

Saturday 13th June

It’s time for another Saturday #67SommSocial, this time led by Sommelier Arthur Chang. Arthur, who has been with the Club for two years, has a particular interest in wines from lesser-known regions boasting ‘a strong character that plays to our more adventurous side’, as he says.

For this session, he has selected a quartet of distinctive wines that highlight some of the further-flung corners of classic European countries. The line-up is designed to spark curiosity, offering Members the chance to discover rare and characterful expressions beyond Burgundy, Bordeaux and Brunello , via equally compelling wines that showcase diversity, heritage and individuality.

Take Metaphusis, a Swiss fizz of which only 1,000 bottles are made. Or the Ministre Impérial red blend from the rugged granitic hills of Corsica. Or the captivating white from the almost extinct Albillo Mayor grape variety made from neglected old bush vines in Ribera del Duero by our former Head Sommelier in London, Terry Kandylis.

This is not a structured, classroom-style masterclass, but rather a relaxed session in a casual, living room–style set-up, which will see Arthur lead the session and introduce each wine, while mingling with Members throughout.

Come and join him to discover a whole new side of Old World wine…

Welcome drink:
Billecart-Salmon, Réserve, Brut

The wines we will be tasting:

2017 Steve Bettschen, Metaphusis, Arvine, Brut Nature
2022 Bendito Destino, El Greco, Albillo Mayor

Napa Valley and beyond, with Head Sommelier Shirley Tan

Wednesday 17th June

Mention California wine, and many people’s thoughts go no further than Napa Valley Cabernet Sauvignon. Yet the Golden State is today home to an increasingly varied array of wines, extending far beyond blockbuster Cabs.

Head Sommelier Shirley Tan is keen to showcase this diversity, and will be hosting a masterclass featuring California wines within both Napa Valley and the state’s lesser-known AVAs (American Viticultural Areas). Shirley has assembled a line-up across grape varietals and regions, from Albariño to Zinfandel, Calistoga to Sonoma, all aimed at illustrating the breadth and depth of California’s ever-expanding vinous landscape.

Shirley will be joined in this quest by Christopher Beros, Asia director at the California Wine Institute. Raised and educated in California, Christopher has lived primarily in Asia since 2007, when he founded the import business California-China Wine Trading.

We invite you to join Shirley and Christopher to uncover a new side of the state that dominates the US’s wine production, through a fascinating selection of wines.

The wines we’ll be tasting:
2025 Gallica, Albariño, Clements Hills AVA, Lodi
2023 Chateau Montelena, Chardonnay, Calistoga AVA, Napa Valley
2023 Senses, Charles Heintz Vineyard Chardonnay, Sonoma Coast AVA, Sonoma

2023 Titus Vineyards, Zinfandel, Napa Valley
2018 Heitz Wine Cellars, Martha’s Vineyard Cabernet Sauvignon, Oakville AVA, Napa Valley

Somms Exchange: Praelum at 67 – Then vs Now: Reassessing the Blind Tastings That Shaped the Wine World

Saturday 27th June

For our next Somm Exchange, we’re bringing out the big hitters – both in terms of the wines and the somms themselves.

Join us for a journey back to the world’s most influential blind tastings, as we re-examine the outcomes and their lasting impact on the wine world.

For this interactive exercise, we’ll be joined by Gerald Lu, co-founder of wine bar and bistro Praelum, who also serves as president of the Sommelier Association of Singapore. Gerald will team up with our Assistant Head Sommelier Yi Ying Ng to revisit historically significant blind tastings and re-examine them through a modern lens, asking if the original results still hold true.

Gerald and Yi Ying have assembled three pairs of wines – Chardonnay, Pinot Noir and Bordeaux blends – in honour of three landmark tastings that pitted Old World against New: the 1976 Judgment of Paris; the 1979 Gault Millau ‘Wine Olympics’; and the 2004 Berlin tasting.

We will all – including our hosts – taste the wines semi-blind (that is we will know the wines being tasted, but not which is which) as we compare past and present winemaking philosophies. Then we will ask Members to vote for their favourites before revealing the results and considering how our tastes and verdicts compare to the approach of the original tasters.

Do join us for what should be a fun and fascinating evening.

Welcome drink:
Billecart-Salmon, Réserve, Brut

The wines we will be tasting:
2019 Joseph Drouhin, 1er Cru Clos Des Mouches Blanc, Beaune, Burgundy
2017 Château Montelena, Chardonnay, Napa Valley, California
