Giacomo Apolloni
Clubroom Head Sommelier
Originally from a small village next to Forte dei Marmi in Tuscany, Giacomo’s journey in London began in 2013, where he started as a bartender in various cocktail bars before landing his role as General Manager at the Looking Glass Cocktail Club, creating an elevated cocktail menu and even crafting his own gin, vermouth, and liqueurs. After conquering the cocktail world, his focus shifted to wine. While working at Michelin-starred restaurants such as Pollen Street Social, the Lecture Room & Library at Sketch, and Hutong at The Shard, he immersed himself in some of the city’s finest wine lists, sommeliers, and chefs—all while advancing his studies. He has since completed the WSET Diploma, CMS Advanced, and WSET Sake Level 3, and is currently on the waiting list for the Master Sommelier exam.
Giacomo joined 67 Pall Mall in 2021 as Deputy Head Sommelier, and four years later was promoted to Clubroom Head Sommelier, where he now leads the drinks service, hunts for exciting new discoveries, and aims to deliver the best possible experience in both taste and hospitality to members.
