So, we have decided to talk only about bone-dry Riesling and dispense with the sweetness discussion altogether, since there are far more interesting things to talk about, such as its incredible ability to reflect site, its international incarnations across climatic zones, its expressions on different soils and its evolution – is it TDN or not? (We are talking about a compound that creates that tell-tale petrol/kerosene character).
