Paulius Berukstis

Cellar Master & Back of House Manager

Paulius was studying law, but his passion has always been hospitality and wine. In 2011 he started to work at Gordon Ramsay’s restaurant at Claridge’s, the famous hotel in London. His starting point there as commis sommelier and made his way up as Senior Sommelier. The next step, career wise, was in Roka/Zuma group and he worked there as an Assistant Head Sommelier. In 2015 Paulius came back to work with Gordon Ramsay to open a new restaurant called the Heddon Street Kitchen and his position there was as Wine Manager. After all was up and running Paulius was looking for a new exiting challenge and that’s when he joined 67 Pall Mall.

Paulius is part of the launch team at 67 Pall Mall. He has changed his career path from front of the house to back of the house, because he wanted to learn the operation from back of the house perspective and get more involved in buying, storing and managing wine. 67 Pall Mall looked like the place to be! That’s why he joined as an Assistant Cellar Master and back of the house manager. After a few years of hard work and dedication Paulius made his way up and became the Cellar Master/BOH Manager.

“Working at 67 Pall Mall allowed me to gain management skills and greater understanding of business finances.

My biggest achievement at 67 Pall Mall was co-creating the whole cellar operation system from nothing to running and managing the cellar stocks for more than 4,400 wines and 32,000 bottles.

This is a huge success and I am very proud of it. I love working at 67 Pall Mall, this place gives me opportunities to be creative and due to company’s expansion I keep getting new and exciting challenges.”
